  1. 5 cups potatoes, cubed, cooked, and peeled

  2. 3/4 c. Canadian bacon, diced and cooked

  3. 1 cup onion, diced

  4. 1 cup celery, diced

  5. 1 cup green pepper, diced

  6. 1 cup red pepper, diced

  7. 3 tbsp. flour

  8. 1 1/3 c. water

  9. 2/3 c. brown sugar

  10. 2/3 c. cider vinegar

  11. 3 tsp. salt

  12. 1/3 tsp. freshly ground pepper

  13. 1/2 c. Dijon mustard

  14. 1 tsp. celery seed

  15. 1/4 c. butter

  1. Instructions Set potatoes aside to cool. Melt butter in a large pan on medium heat. Add vegetables and sauté for about 2-3 minutes. In a separate cup, stir together the flour and water, then add to the pan and stir. Add remaining ingredients to the pan and stir until thick and bubbling. Place potatoes in a large mixing bowl and pour the vegetables over top. Let chill in refrigerator for 2-3 hours before serving.
