  1. 2 Lbs yellow summer squash (4-6) Steamed

  2. 2 eggs

  3. 1 cup butter, melted

  4. 1/2 cup sugar

  5. 3 Cups flour

  6. 1 tsp salt

  7. 1 Tbls and 2 tsp baking powder

  8. 2 cups mashed squash and combine with eggs and butter. Stir well and set aside. Combine remaining ingredients in a large bowl. Make a well in center of mixture. Add squash mixure to dry ingredients. Stir just to moisten. Spoon into muffin cups

  9. 3/4 full. Bake at

  10. 375 F for 20 min. Serve hot with gobs of butter...YUMMY!!!
