  2. VEGETABLE-SESAME PIE

  6. --CRUST--

  7. 1 c AM Brown Rice Flour

  8. 1/4 c AM Hulled Sesame Seeds

  9. 2 tb AM Unrefined Sesame Oil

  10. 2 tb AM Sesame Tahini

  11. 1/4 c Water

  12. --FILLING--

  13. 3 tb AM Unrefined Sesame Oil

  14. 1/2 Onion -- minced

  15. 2 Garlic cloves -- minced

  16. 2 c Chopped turnips or potatoes

  17. 2 c Chopped carrots

  18. 1 c Finely chopped broccoli

  19. - stems

  20. 1/4 c AM Sesame Tahini

  21. -OR- Peanut Butter

  22. 2 ts Cider vinegar

  23. 1 t Syrup or honey

  24. 1/4 ts Sea salt

  25. 1 tb Tamari soy sauce

  26. 1/2 ts Ginger

  27. --MIX--

  28. 3 tb Arrowroot powder

  29. 1/2 c Cold water

  30. CRUST: Mix all ingredients together until evenly

  31. 10 pie plate. Bake at

  32. 400 F.

  33. for 15 minutes.

  34. FILLING: Preheat large skillet on medium heat. Add

  35. oil, onion and garlic; saute 1 minute. Add chopped

  36. vegetables; saute until almost tender, about 10

  37. minutes. Add seasonings (last six ingredients). Stir.

  38. Mix arrowroot or cornstarch in cold water. Stir into 1-1/2 cups more cold water or orange juice. Pour over

  39. vegetables. Lower heat. Stir and simmer until

  40. slightly thickened. Pour all over crust. Sprinkle

  41. 1/2 cup chopped nuts. Bake at

  42. 375 F. for minutes or until set.

  43. Other vegetables may be substituted for those above,

  44. such as mushrooms, cauliflower, purple cabbage,

  45. celery, etc.
