  1. 2 tablespoons 30ml Grapefruit (large)

  2. 2 tablespoons 30ml Oranges (large)

  3. 2 teaspoons 10ml Vegetable oil

  4. 1/2 cup 31g / 1.1oz Onion - thinly sliced separated into rings

  5. 1 tablespoon 15ml White wine vinegar

  6. 1 teaspoon 5ml Honey

  7. 1/8 teaspoon 0.6ml Salt

  8. 8 cups 320g / 11oz Spinach leaves - torn, loosely packed

  9. 1/4 cup 7 1/2g / 1/3oz Plain croutons

  1. Recipe Instructions Peel and section grapefruit and oranges over a bowl; squeeze membranes to extract juice. Set sections aside; reserve 1/4 cup juice. Discard membranes. Heat oil in a large Dutch oven over medium heat. Add onion, and saute 30 seconds. Stir in reserved juice, vinegar, honey, and salt. Add fruit and spinach; cook 1 minute or until spinach begins to wilt, tossing gently.
