  1. Cajun Andouille in Comforting Barbecue Sauce 4 cups onions, finely chopped

  2. 1 cup celery, finely chopped

  3. 1 cup bell pepper, finely chopped

  4. 1 cup parsley, finely chopped

  5. 1 cup peanut oil

  6. 1 tablespoon garlic, finely chopped

  7. 3 cups steak sauce

  8. 1/2 cup Louisiana hot sauce

  9. 3 cups ketchup

  10. salt, to taste

  11. 1 cup Southern Comfort

  12. 1 pound andouille sausage

  13. Saute onions, celery, bell pepper, and parsley in peanut oil until

  14. the onions are clear or tender. Add garlic and cook a little

  15. longer. Add steak sauce, hot sauce, and ketchup. Add salt to

  16. taste. Add Southern Comfort. Bring to a boil. Lower heat and 2 to 3 hours. Makes about 3/4 gallon. This will keep in

  17. the refrigerator for weeks.

  18. 1 lb. andouille or smoked sausage

  19. 1/4 inch thick and combine

  20. with 1 cup sauce. Heat well on stove or in a chafing dish. Serve

  21. with small pieces of French bread or use toothpicks to spear

  22. andouille. You will need plenty of napkins, also, too. Other smoked

  23. sausages may be used, but we like andouille.
