  1. --Muffin Mix-- 1 1/2 Cups All-Purpose Flour

  2. 3/4 Cup Packed Brown Sugar

  3. 1/2 Teaspoon Baking Soda

  4. 1/2 Teaspoon Salt

  5. 1/3 Cup Vegetable Oil

  6. 1 Egg -- Lightly Beaten

  7. 1/2 Cup Buttermilk

  8. 1 Teaspoon Vanilla Extract

  9. 1 Cup Rhubarb -- Diced

  10. 1/2 Cup Chopped Walnuts

  11. --Topping-- 1/4 Cup Packed Brown Sugar

  12. 1/4 Cup Chopped Walnuts

  13. 1/2 Teaspoon Cinnamon

  14. 3750 F for 20-25 minutes or until muffins test done. Cool

  15. 10 minutes before removin g to a wire rack. Yields

  16. 10 muffins.
