  1. 6 hard-cooked eggs

  2. 1/3 cup mild salsa

  3. 3 tablespoons low-fat sour cream

  4. 3 tablespoons green onions -- minced

  5. 1 tablespoon black olives -- chopped

  6. 1 teaspoon lemon juice green onions -- optional red pepper strips -- optional parsley -- optional

  1. Preparation : Cut eggs in half lengthwise. Remove yolks and set aside whites. Mash yolks with fork. Stir in remaining ingredients until combined. Refill whites, using 1 tablespoon yolk mixture for each egg half. Chill to blend flavors. Garnish with green onions, red pepper strips or parsley, if desired.
