  1. 1 Pizza shell

  2. 2 lbs 908g / 32oz Zucchini*

  3. 3/4 cup 177ml Pesto

  4. 2 Garlic cloves - peeled/minced

  5. 1/2 lb 227g / 8oz Mozzarella - shredded

  1. *washed, trimmed, grated or shredded, and squeezed dry in a dish towel.

  2. Preheat oven to 500F for 30 minutes for a pizza pan or 60 minutes for pizza tiles or stones.

  3. Combine the zucchini, pesto, garlic, and mozzarella in a large bowl. Spread the mixture over the dough shell.

  4. Bake in a preheated 500F oven for 10 to 15 minutes, or until the crust is golden. This pie is delicious hot or cold.
