  2. 8 Ears corn

  3. 1 Stick butter -- cut into bits

  4. 2 Scallions -- chpd

  5. 1 Clove Garlic -- crushed

  6. 1 1/2 Tablesoons Chili powder

  7. 1 Teaspoon Lemon juice

  8. Salt

  1. Prepare a medium fire. Gently peel back corn husks, leaving attached atbase.

  2. Remove silk. In food processor, combine butter, scallions, garlic, chilipowder, and lemon juice. Process until well blended. Rub 2t of this butterover each ear of corn. Fold husks back over; tie with string; soak corn in alg bowl of cold water 10 mins to prevent burning. Squeeze out excess water.

  3. Place damp corn on an oiled grill set 4-6" from coals. Grill, turning andmoving ears frequently, until outside leaves are lightly charred. Peel offhusks and serve with additional chili butter.
