  1. 1 cup 62g / 2 1/5oz Whole-wheat flour

  2. 1/4 cup 59ml Nonfat powdered milk

  3. 2 teaspoons 10ml Baking powder

  4. 1 teaspoon 5ml Cinnamon

  5. 1/4 teaspoon 1 1/3ml Nutmeg

  6. 1/4 teaspoon 1 1/3ml Salt -

  7. 1/4 cup 59ml Bran

  8. 1/4 cup 59ml Wheat germ

  9. 1/2 cup 80g / 2.8oz Raisins

  10. 1/4 cup 49g / 1.7oz Reduced-calorie margarine - softened

  11. 1/2 cup 73g / 2.6oz Low-fat cottage cheese

  12. 1/4 cup 49g / 1.7oz Sugar

  13. 2 tablespoons 30ml Honey

  14. 1/4 cup 49g / 1.7oz Egg substitute

  15. 1 teaspoon 5ml Vanilla

  1. Sift the flour, dry milk, baking powder, cinnamon, nutmeg, and salt. Add bran, wheat germ, and raisins.

  2. In a large mixing bowl, beat margarine and cottage cheese until smooth. Add the sugar and honey and beat until fluffy. Add the egg substitute and vanilla and beat the mixture again.

  3. Stir the reserved flour mixture into the cottage cheese mixture until they are just blended.

  4. Drop dough by the rounded teaspoonful about 2 inches apart on cookie sheets coated with nonstick vegetable cooking spray.

  5. Bake at 350 degrees for 8 to 10 minutes or until the edges of the cookies turn golden. Remove the cookies from the pan to a rack to cool.

  6. This recipe yields 30 cookies. Serving size: 2 cookies.
