  1. 1 garlic clove Kosher salt

  2. 1/4 teaspoon red pepper flakes

  3. 2 pounds heirloom tomatoes, assorted colors and sizes

  4. 12 ounces fresh mozzarella , diced

  5. 1/2 cup chopped fresh basil leaves

  6. 1/4 cup chopped fresh mint leaves

  7. 1/3 cup extra-virgin olive oil

  8. 1 (13 1/4-ounce) package Whole Grain Thin Spaghetti

  1. Crush and chop the garlic with 2 teaspoons salt and pepper flakes. Cut the tomatoes into 1 to 2 inch pieces. Halve or quarter them, if small. Toss the tomatoes with the seasoned garlic , mozzarella, herbs , and extra-virgin olive oil. (This can be prepared up to 2 hours ahead). Cook pasta according to the package directions. Drain and toss with the tomato mixture. Serve warm or at room temperature.
