  7. 3 Leeks

  8. 1/2 lb Carrots

  9. 1/2 lb Parsnips

  10. 1/2 lb Swede

  11. 2 lb Potatoes

  12. Salt and pepper

  13. Remove as much tat as possible from the cutlets and boil the meat gently in water for 1 hour. Skim off

  14. fat. Peel and cui up the vegetables and add to the

  15. lamb. Add salt and pepper to taste. Cover and simmer

  16. until the vegetables are tender.
