  1. Pineapple Caramel Pie

  2. 3/4 cup brown sugar

  3. 2 Tbs butter

  4. 3 Tbs cornflour

  5. pinch salt

  6. 1 Tbs grated orange rind

  7. 1 tin crushed pineapple

  8. pastry

  9. Line a pie plate with pastry. Put in a saucepan the sugar, cornflour

  10. and salt with a little of the pineapple juice from the tin; add

  11. the rest of the tin. Cook, stirring all the time until thick and clear. Stir in butter and orange peel. Cool slightly before

  12. putting into pastry shell. Bake 35 minutes in a fairly hot oven.
