  1. Haricots Verts Salad

  2. 4 Juice of

  3. 1 lemon

  4. 1 tablespoon truffle oil

  5. 1/2 cup virgin olive oil

  6. 1 pound haricot verts, blanched, shocked

  7. 1 bunch chives, cut into 1-inch" batons

  8. Truffle oil, for garnish

  9. Salt, to taste

  10. Freshly-ground black pepper, to taste

  11. In a stainless steel bowl, mix lemon juice, truffle oil and olive

  12. oil. Season with salt and pepper. Toss vinaigrette with the haricots

  13. verts. Check for seasoning. Garnish with chives.
