  5. 2/3 c Flour; Unbleached, Unsifted

  6. 2 ts Sugar

  7. 1/4 ts Salt

  8. 4 ea Eggs; Large, Beaten

  9. 1/2 c Milk

  10. 2 c Apple; Slices

  11. 3/4 c Butter Or Margarine

  12. 2 tb Sugar

  13. 1/4 ts Cinnamon

  14. Sift together the flour, 2 t sugar, and the salt.

  15. Beat eggs and milk together. Gradually add flour

  16. mixture; beat until smooth. Saute apples in 1/4 c of

  17. butter until tender. Mixt 2 T sugar and the cinnamon

  18. together; toss with apples. Melt 2 T butter in a

  19. 6-inch diameter, deep frypan. Pour in the batter to a

  20. 1/4-inch. When set, place

  21. 1/4 of the

  22. apples on top; cover with more batter. Fry pancake

  23. until lightly browned on both sides. Keep warm.

  24. Repeat the procedure 3 times, until all batter and apples are used. Serve immediately. --
