  1. 1 8oz can crushed pineapple (juice pack)

  2. 1/2 cup water

  3. 1 3oz package lemon flavored gelatin

  4. 2 1/2 cups ice cubes (about 10)

  5. 1 9oz container frozen whipped dessert topping, thawed

  6. 1 1/4 cups crumbled coconut macaroons Toasted coconut

  1. Drain pineapple, reserving jice(about ½ cup). Set pineapple aside. In saucepan combine reserved juice and water; bring to boiling.

  2. Remove from heat. Add gelatin; stir til dissolved. Add ice cubes and stir about 2 minutes or till gelatin is thickened. Remove any unmelted ice.

  3. Stir in thawed dessert topping; beat till smooth. Fold in pineapple. Chill, if necessary, till mixture molds with spoon..

  4. Spoon mixture into parfait glasses, alternating with crumbled macaroons. Chill. If desired, top with toasted coconut.
