  1. Lemon Meringue Pie

  2. 1 1/2 cups sugar

  3. 1/2 cup cornstarch

  4. 1/8 tsp salt

  5. 4 egg yolks

  6. 1 3/4 cups water

  7. 1/2 cup lemon juice

  8. 3 Tbsp butter or margarine

  9. 1 tsp grated lemon rind

  10. 1 baked 9-inch pastry shell

  11. Meringue (recipe follows)

  12. Combine first 3 ingredients in a saucepan. Set this aside. Combine

  13. egg yolks, water, and lemon juice; stir into sugar mixture. Cook

  14. over medium heat, stirring constantly, until mixture thickens and boils. Boil one minute, stirring constantly. Remove from heat.

  15. Stir in butter and lemon rind. Spoon into pastry shell. Spread

  16. 325F for 25-28 minutes.

  17. Meringue

  18. 4-6 egg whites

  19. 1/2 to 3/4 tsp cream of tartar

  20. 1/2 cup sugar

  21. 1/2 tsp vanilla extract

  22. Beat egg whites and cream of tartar at high speed just until foamy.

  23. Gradually add sugar, 1 tablespoon at a time, beating until stiff

  24. peaks form and sugar dissolves (2-4 minutes). Add 1/2 teaspoon

  25. vanilla, beating well.
