  1. 2 cups cottage cheese

  2. 3/4 cup soft whole wheat bread crumbs (about 1 slice)

  3. 1/2 cup all-purpose flour

  4. 1/3 cup snipped parsley

  5. 1/3 cup finely chopped green onion

  6. 2 tablespoons margarine or butter

  7. 1/4 teaspoon salt

  8. 4 eggs

  9. 1 tablespoon snipped parsley

  1. In a medium mixing bowl combine cottage cheese, bread crumbs, flour, 1/3 cup parsley, green onion, margarine or butter, and salt. Set aside.

  2. In a large mixing bowl beat eggs with an electric mixer on high speed about 5 minutes or until thick and lemon colored. Gradually pour the cottage cheese mixture over the beaten eggs, folding to combine.

  3. Pour the egg mixture into an ungreased 5- or 6-cup souffle dish or casserole. Bake in a 350 degree F oven about 1 hour or until a knife inserted near the center comes out clean. Sprinkle with 1 tablespoon parsley. Serve immediately. Makes 6 main-dish servings.
