  1. 1 head green cabbage

  2. 8 medium beets

  3. 1 cup seaside lima beans (the big, puffy ones)

  4. 4 all purpose potatoes

  5. 3 medium onions

  6. 1 big can tomato puree

  7. pinch of sour salt (if you can't get sour salt , kosher is fine)

  8. sugar or honey 3 - 4 tablespoons

  1. Steam beets until tender and peel.

  2. Grate half of the beets and then cut the remaining in chunks.

  3. Combine with onions and potatoes, cabbage and beans in large soup pot.

  4. Cover with water.

  5. Cook 45 minutes over medium low heat.

  6. Add tomato puree.

  7. Cook for another fifteen minutes, add sugar and salt.

  8. Cook another 15 minutes.

  9. Chill well before serving.
