  1. 1 pound fresh white mushrooms

  2. 1/3 cup extra-virgin olive oil

  3. 1/3 cup red-wine vinegar

  4. 3 ounces sliced smoked ham or Canadian bacon, cut in 1-inch strips

  5. 1 medium red or green bell pepper, cut in 1-inch pieces

  6. 16 fresh basil leaves

  7. 2 tablespoons chopped parsley

  1. Prepare outdoor grill, placing grill rack 5 inches from heat source, or preheat broiler. With a small brush, clean mushrooms; set aside. In small bowl combine oil and vinegar; set aside.

  2. On 4 large or 8 smaller skewers alternately thread mushrooms, ham or bacon, pepper and basil leaves. Brush generously with oil-vinegar mixture.

  3. Grill or broil 5 inches from heat source until mushrooms are golden, turning occasionally , about 6 to 7 minutes. Place skewers on platter, brush with any remaining oil-vinegar mixture. Sprinkle with parsley.
