  7. 2 cups large broad beans, soaked for 24 hours I Tablespoon olive oil

  8. 2 medium

  9. onions, chopped 4 cloves garlic, crushed I hot pepper,

  10. finely chopped 2 medium tomatoes, chopped into small

  11. pieces I medium carrot, finely chopped I medium

  12. potato, diced into 1/2-inch

  13. 1/2 c finely chopped coriander leaves

  14. 1 teaspoon pepper

  15. 1 teaspoon cumin

  16. cups water Drain beans, remove skins, and set beans

  17. aside.

  18. Heat oil in a saucepan; then sout6 onions, garlic,

  19. and hot pepper for 10 minutes. Add remaining

  20. ingredients and bring to boil. Cover and cook over

  21. medium heat for 1 hour or until broad beans are

  22. well-cooked, stirring a few times and adding more

  23. water if necessary.

  24. Note: 4 cups of pre-cooked fava beans can be

  25. substituted for the 2 cups of dry beans. If the

  26. cooked fava beans are used, cook the soup for only
