  1. 1 Large egg

  2. 1/2c Evaporated milk

  3. 1 ts Salt

  4. 1/2ts Pepper

  5. 1 1/2lb Lean ground beef

  6. 1 c Ritz cracker crumbs

  7. 3/4c Grated Swiss cheese, divided

  8. 1/4c Finely chopped onion

  9. 3 Strips bacon, cut into 1-inch pieces

  1. + Directions : Beat egg in a large mixing bowl. Add evaporated milk, salt and pepper; mix well. Add ground beef, cracker crumbs, 1/2 cup cheese and onion; blend well. Form mixture into a loaf. Place loaf in a 2-quart baking dish and arrange bacon pieces on top. Bake at 350F. for 40 minutes. Remove from oven and sprinkle remaining 1/4 cup cheese on top of meat loaf. Return to oven and bake for 10 more minutes. The addition of Swiss cheese gives this meat loaf a distinctive flavor.
