  1. 1/3 cup margarine

  2. 1/3 cup brown sugar

  3. 1/3 cup golden syrup / molasses

  4. drop of vanilla

  5. half drop almond essence

  6. 3 1/2 cups plain flour

  7. 1/2 tsp mixed spices ( ground cloves etc)

  8. 1/2 tsp cinnamon

  9. 1/2 tsp ginger

  10. pinch salt

  11. 1/4cup water

  12. Choc drops to decorate.

  1. Preheat oven to 350 degees. Grease two baking trays or use silicon baking sheets.

  2. In a large bowl cream the margarine and butter.

  3. Add the molasses, vanilla and almond.

  4. Sift flour, salt and spices into a separate bowl.

  5. Add half the dry ingredients and half the water. Mix Add the other half dry ingredients and half the water.

  6. You should have nice dough. (I don't need to use flour to dust when rolling).

  7. Roll out onto a surface and cut into shapes. Best cookies are the thinnest ones.

  8. Bake for 8-12mins on a low shelf in a fan oven. (Low shelf helps cook evenly as fan blows over the top).

  9. Decorate while still hot (and the choc drops melt).
