  1. For the bolognese sauce:

  2. 1 tablespoon oil

  3. 1 onion, peeled and diced

  4. 1 courgette

  5. 1 red or green pepper

  6. 6 mushroms

  7. jar of tomato pasta sauce

  8. For the mice meatballs:

  9. 500g lean beef mince

  10. 2 eggs, beaten

  11. pinch mixed herbs

  12. To decorate the mice:

  13. Frozen peas for the eyes

  14. tinly sliced pieces of carrot for the ears

  15. 250g spaghetti

  16. Grated parmesan cheese, to serve

  1. To make the mince: Heat the oil over medium heat; add beef mince and cook for 5 or 10 minutes, or until it begins to brown. Add diced onion, courgette, peppers and mushrooms. Cook for a further 5- 10 minutes, or until onions and peppers have softened. Pour in tomato pasta sauce, stir and allow to simmer for 15 minutes.

  2. Preheat the oven to 180 degrees C.

  3. To make the mice meatballs: mix the mince with the beaten egg and herbs. USe your hands to form mice shaped meatballs and place on an baking tray or roasting dish. Cook for 15-20 minutes.

  4. Boil the spaghetti according to the packet instructions; drain. Heat the peas and carrot slices in the microwave.

  5. Serve the spaghetti, topped with bolognese sauce and grated cheese. Position a mince mouse at the side of each plate using a piece of spaghetti for the tail, sliced carrots for the ears and peas for the eyes.
