  1. 1 package Lemon Cake Mix

  2. 8 ounces cream cheese, softened to room temperature

  3. 1/3 cup granulated sugar

  4. 1/4 cup real lemon juice

  5. 1/3 cup cooking oil , (Cooks Choice)

  1. Mix cake mix, 1 egg & oil until mixture is crumbly, like coarse corn meal or oatmeal, set aside 1 cup of this mixture to use later. Place remaining mixture into an un-greased 13x9x2 in pan/baking dish. Press lightly to form an even shape of the dish/pan, & then bake in a 350-degree oven for 15 minutes.

  2. While this is baking, beat in a mixing bowl cream cheese, sugar, lemon juice & other egg, beating until light & smooth. When baking of other is done, pour this cream cheese mixture over the top, sprinkle with the 1 cup reserved crumbly mixture, return to oven for 20 minutes, remove, cool & cut into bars, (cooks Choice to size).
