  1. Nancy Bubell's Root Cellaring book

  2. 6 slices bacon

  3. 2 cups sliced onions, (sis uses large spring onions, so I think any kind will work)

  4. pastry to line bottom of 9" pie plate

  5. soft butter

  6. 1/2 lb. sharp cheese grated (cheddar or whatever is your fave)

  7. 2 large eggs, slightly beaten

  8. 3/4 cup milk

  9. black pepper to taste

  10. 400 F for 10 minutes; reduce heat to

  11. 325 F for an additional

  12. 25-30 minutes.

  13. Variations: you can add thyme for extra flavor. Sister likes to salt her onions to help them sweat out the bitter oil. Parmesan can easily be added with your sharp cheese too.
