  1. 3 tbs. Butter melted

  2. 5 Large egg s or egg substitute

  3. 1 c. cottage Cheese

  4. 1/2 c. shredded cheddar cheese

  5. 1 four oz can diced green chile 's

  6. 1/4 c. flour

  7. 1/2 tsp. baking powder

  8. 1/2 tsp. salt

  1. Preheat the oven to 350°. Brush an 8 inch baking dish with 1 tbs. butter and set aside.

  2. In medium bowl, whisk together eggs, cottage cheese, cheddar cheese, chile’s, flour, baking powder, ½ tsp. salt and remaining 2 tbs. butter.

  3. Pour into prepared dish and bake until set, about 35 minutes or so.
