  1. Cook rice and refrigerate overnight. Cook in skillet 2 beaten eggs. Cover the skillet but do not stir. Remove to plate and cut into strips. Add oil, chopped green onions (5-6), chopped ham and cook to heat through. Add water chestnuts, bean sprouts. Add rice, toss together and add soy sauce to taste, heat through. Add egg back in just before serving.
