  1. 2-8 oz. packages cream cheese

  2. 3/4 cup sugar

  3. 2 eggs

  4. 1 tsp. vanilla

  5. 1 tbsp. lemon juice

  6. 24 cupcake papers

  7. 24 vanilla wafers

  1. Combine first 5 ingredients and beat until light and fluffy--put cupcake papers in muffin tins. Put one cookie in each paper. Spoon filling into each cupcake paper, making them approximately 3/4 full. Bake at 375 degrees for 15 to 20 minutes. Refrigerate overnight. Spoon cherry pie filling or whatever kind of fruit that you like on top of each cheesecake before serving.
