  2. 1 Bunch scallions Diced

  3. 1 Medium bell pepper Diced (Red or Yellow)

  4. 1/4 lb sliced mushrooms

  5. 1/2 Cup sour cream

  6. grated cheese

  7. 3 eggs

  1. Add the scallions, green pepper, and mushrooms and saute in a greased pan add eggs .

  2. Stir the contents of the pan to mix as it cooks.

  3. Add the mixture to tortillas and top with sour cream.
