  1. 3 Navel oranges (large)

  2. 2 tablespoons 30ml Fresh oregano leaves

  3. 3 to 4 sprigs

  4. 1/4 Red onion - thinly sliced

  5. A generous drizzle extra-virgin olive oil

  6. 2 tablespoons 30ml Red wine vinegar

  7. Salt - to taste

  8. Freshly-ground black pepper - to taste

  1. Remove skin and pith from oranges. Slice oranges in 1/4-inch thick disks. Arrange orange slices on a serving plate and sprinkle with the oregano, onions, and dress with the extra-virgin olive oil, red wine vinegar, salt, and pepper. Serve.
