  1. 4 cups 640g / 22oz Cooked rice

  2. 1 Butter

  3. 1 cup 62g / 2 1/5oz Onion - chopped

  4. 1/2 Cottage cheese

  5. 1/2 Sour cream Salt and pepper to taste

  6. 2 1/2 cups 365g / 12oz Colby or Jack cheese - grated

  7. 2 Green chiles - drained and chopped (4 oz ea)

  8. 1 Jalapeno pepper - chopped fine

  1. Recipe Instructions Saute onion in butter. Add onion to cottage cheese, sour cream and then add rice. Place 1/2 of the mixture in a casserole dish. Sprinkle on green chilies, jalapenos and grated cheese. Add rest of rice and top with another layer of the cheese and chilies. Bake at 350F for 20 to 30 minutes until hot and cheese is melted.
