  1. 4 ts Margarine

  2. 1/3 c Light brown sugar

  3. 16 oz Pineapple slices; can, drai

  4. and reserve juice

  5. 4 Maraschino cherries, cut in

  6. alf

  7. 1 1/4 c Flour

  8. 3/4 c Sugar

  9. 2 ts Baking powder

  10. 1/2 ts Salt

  11. 1 Egg

  12. 1/3 c Oil

  13. 1/2 c Pineapple juice; reserved

  14. 1/2 ts Vanilla extract

  15. 1/2 ts Almond extract

  1. Line a 9" round baking dish with parchment paper, folding paper over the sides.

  2. Put margarine on paper and microwave on high 45 seconds or until melted.

  3. Sprinkle brown sugar over margarine.

  4. Arrange 7 pineapple slices on top of sugar mixture.

  5. Decorate centers of slices with cherries Place flour, sugar, baking powder and salt in a medium mixing bowl.

  6. Add egg, oil, reserved pineapple juice and extracts.

  7. Blend with a wooden spoon and pour batter over pineapple slices.

  8. Rotating midway through cooking, microwave on 50 % (medium) 5 minutes; then microwave on high 4 to 5 minutes, rotating dish twice.

  9. Let stand 5 minutes and invert on serving plate.

  10. Remove parchment paper and discard.
