  1. 1 lb 454g / 16oz Crawfish tails

  2. 1 cup 62g / 2 1/5oz White onions - chopped fine

  3. 1 cup 110g / 3.9oz Celery - with tips, chopped

  4. 1/2 cup 31g / 1.1oz Green onions - chopped fine

  5. 1/2 cup 73g / 2.6oz Parsley - chopped fine

  6. 1/4 lb 113g / 4oz Butter

  7. 1 tablespoon 15ml Tony's Creole seasoning

  1. Cook white onions and celery with the butter until the onions are translucent -- medium heat about 25 minutes.

  2. Add green onions and parsley and cook 15 minutes more. Add seasoning and the tails.

  3. Cook 8 minutes.

  4. Serve over rice.
