  1. 4 chicken breasts

  2. 2 tbsp Smart Balance Omega Oil

  3. 1 tsp salt

  4. 1/2 tsp pepper

  5. 1 red pepper

  6. 1/2 fennel bulb

  7. 1/2 red onion

  8. 4 yukon gold potatoes

  9. 2 tbsp minced garlic

  10. 1 cup dry white wine

  11. 2 tbsp pesto

  12. 1 tsp thyme

  13. 1 tbsp lemon juice

  14. 2 cups low sodium chicken broth

  15. 1/2 cup cream of chicken soup

  1. Description: A delicious one pot meal! STEP 1: Cut the chicken breasts into 1 inch pieces. Add to a Dutch oven or heavy bottom pot and toss with the oil, salt and pepper. Cook on medium high until browned, about 8 minutes. Transfer chicken to a plate. STEP 2: Meanwhile, cut the red pepper, fennel, onion and potatoes into 1 inch pieces. Add to the pot (after removing chicken) and cook until slightly tender, about 5 minutes. STEP 3: Add the garlic and white wine and cook for another 2 minutes. STEP 4: Return the chicken to the pot and any juices along with the pesto, thyme, lemon juice, chicken broth and cream of chicken soup and stir well. STEP 5: Cover and simmer on low for 1 hour, stirring occasionally. STEP 6: Enjoy with crusty wheat bread topped with Smart Balance Buttery Spread of course!!
