  1. 4 med potatoes -- cut in

  2. 3/4" cubes

  3. 1 tbsp vegetable oil

  4. 1 lb lean pork -- cut in thin strips

  5. 1 c cherry tomatoes

  6. 1/3 c orange marmalade

  7. 2 tbsp dijon-style mustard

  8. 6-10 minutes or until tender. Meanwhile, heat oil in large skillet over high heat. Add pork and toss until opaque. Drain. Add potatoes and tomatoes; saute and toss
