  1. 1 lb. bread , cubed

  2. 1/4 c roasted red pepper s, chopped

  3. 1/4 c scallion s, sliced

  4. 1/2 c grated Parmesan cheese

  5. 1 lb. chopped tomato es

  6. 1/4 c black olive s, sliced

  7. 1/2 c shredded mozzarella cheese

  8. 6 egg s

  9. 3 c milk

  10. 2 T caper s, chopped

  11. Salt and pepper to taste

  1. Grease a 9“x13” pan.

  2. Sprinkle half the bread on the bottom. Sprinkle with peppers, onions, and Parmesan. Sprinkle the other half of the bread in the pan, then sprinkle with tomatoes, olives, capers, and mozzarella.

  3. Whisk together eggs, milk, salt, and pepper and pour over the top.

  4. Put in the fridge overnight. The next morning, bake at 325°F for 45 minutes, until golden brown and set.
