  5. 3 tb Vegetable oil

  6. 1/2 lb Lasagna noodles

  7. 2 Garlic cloves, minced

  8. 1 md Onion. chopped

  9. 2 Tomatoes, chopped

  10. 10 md Mushrooms, sliced

  11. 1/2 ts Oregano

  12. 1/2 ts Basil

  13. 1/2 ts Rosemary

  14. 2 tb Chopped fresh parsley

  15. 1 lb Washed spinach

  16. 1 c Cottage cheese

  17. 1/2 c Grated parmesan

  18. 8 oz Grated mozzarella

  19. Cook noodles till al dente. Drain & set aside.

  20. Preheat oven to 350F.

  21. Heat oil in a large skillet & saute onion, garlic,

  22. tomatoes & mushrooms. When onion is translucent, add

  23. herbs. Chop the spinach & add to the skillet & stir

  24. till it is wilted. Simmer.

  25. Reserving 1/2 c mozzarella, in a large bowl combine

  26. the cheeses. Pour vegetables into the cheese mixture

  27. & mix thoroughly. Layer noodles alternately with the

  28. vegetable-cheese in an 8x13-inch baking pan. Top with

  29. reserved mozzarella & bake for 30 minutes. Let sit

  30. 5 to 10 minutes before serving.
