  1. 1 cup 237ml Red wine vinegar - plus

  2. 2 tablespoons 30ml Red wine vinegar

  3. 7 cups 1659ml Cold water

  4. 1 Fresh thyme sprig

  5. 1/2 Leek - cleaned (small)

  6. 1 Celery - (3" long)

  7. 3 Garlic cloves - peeled (medium)

  8. 2 Bay leaves

  9. 1 teaspoon 5ml Fine sea salt

  10. 1 1/2 teaspoons 7 1/2ml White peppercorns

  1. Combine all ingredients in a large saucepan. Bring to a boil and boil for 10 minutes. Strain through a fine mesh sieve. Store tightly covered in the refrigerator for up to 3 days or in the freezer for up to 2 months.
