  1. 1 c Uncooked rice

  2. 1 1/2 tb Chopped fresh basil

  3. 1/2 c Chopped fresh parsley

  4. 1 ea Head curly endive, chopped

  5. -tomatoes, crushed

  6. -or 28 oz can whole plum

  7. 10 ea Ripe plum tomatoes, chopped,

  8. 3 c Vegetable stock

  9. 3 tb Olive oil

  10. -half moons

  11. 2 sm Carrots, peeled & cut into 2 ea Celery stalks, sliced

  12. 1 1/2 c Chopepd onions

  13. Salt & pepper

  1. Cook the rice.

  2. Meanwhile, saute the onions, celery & carrots in the olive oil till tender.

  3. Add the stock & tomatoes & endive.

  4. Simer for about 15 minutes.

  5. Stir in the cooked rice.

  6. Add parsley & basil.

  7. Season with salt & pepper to taste.
