  1. 1 LB. Ground Beef

  2. 1/2 c Each: chopped onion, celery

  3. -and bell pepper

  4. 1 Garlic clove, minced

  5. 1 c Medium pearl barley

  6. 1/4 c Tomato paste

  7. 2 ts Instant beef bouillon

  8. -granules

  9. 2 1/2 c Boiling water

  10. 1 cn Tomatoes or stewed tomatoes,

  11. -with liquid (14 1/2 ounces)

  1. Crumble beef into a microwave safe plastic colander suspended over a 3 qt.

  2. casserole.

  3. Top with onion, celery, bell pepper and garlic; cover with casserole lid or vented plastic wrap.

  4. Stirring midway through cooking, microwave on HIGH for 6 minutes, or until beef is no longer pink.

  5. Discard grease and place barley, tomato paste and bouillon in same casserole.

  6. Pour boiling water over barley; stir.

  7. Top with beef mixture and tomatoes with liquid; do not stir.

  8. Re-cover and microwave on MEDIUM- HIGH (70 %) for 30 minutes.

  9. Stir and let stand for 5 minutes.

  10. Makes 6 servings.
