  1. 1 cup vegetable oil

  2. 2 cups sugar

  3. 4 egg s

  4. 2 cups flour

  5. 2 teaspoons baking soda

  6. 2 teaspoons cinnamon

  7. 1/4 teaspoon salt

  8. 3 cups grated carrot s

  9. 1 cup chopped walnut s Frosting

  10. 1 8 ounce package cream cheese

  11. 1 package confectioners sugar

  12. 1/2 stick butter

  13. 2 teaspoons vanilla

  1. Preheat oven to 300 degrees. Grease and flour a 10 X 14 inch pan 2. Make cake: beat together oil, sugar and eggs 3. Sift remaining dry ingredients, add to above and mix well 4. Fold in grated carrots ( a food processor makes life bearable) and walnuts 5. Bake 1 hour at 300 degrees 6. Make frosting: cream all ingredients, and store in refrigerator until ready to spread on cooled cake
