  1. Hash Browns

  2. 1 large or 2 medium cold cooked whole potatoes (per person)

  3. olive oil or bacon drippings

  4. paprika to taste

  5. Coarsely chop the cold cooked potatoes (boiled in skin or micro

  6. waved) Heat oil in a heavy skillet (fry pan) on medium to medium

  7. low heat. Add potatoes to the heated oil, no higher then the side

  8. of the skillet.

  9. lightly sprinkle potatoes with paprika. Cook for about 10 minutes

  10. without stirring (should be browned), then gently turn or stir

  11. potatoes to cook them on another side.
