  1. 2 lbs 908g / 32oz Bowfin fillets - (to 3) - cut bite sized

  2. 1/2 cup 118ml Peanut oil

  3. 2 cups 125g / 4.4oz Chopped onion

  4. 1 cup 146g / 5.1oz Chopped green pepper

  5. 8 Garlic cloves - chopped

  6. 1 can Diced tomatoes and green chilies - (10 oz)

  7. 1 can Tomato sauce - (8 oz)

  8. 2 cups 474ml Water

  9. 1 packet Sliced mushrooms - (4 oz)

  10. 1/2 cup 31g / 1.1oz Chopped green onion tops

  11. 1/4 cup 36g / 1 1/3oz Chopped parsley

  12. 1/4 teaspoon 1 1/3ml Cayenne pepper

  13. 1 teaspoon 5ml Salt

  14. 1 teaspoon 5ml Freshly-ground black pepper Hot cooked rice - for serving

  1. Recipe Instructions Heat peanut oil in a heavy pot, and fry fish pieces 2 to 3 minutes. Remove fish from oil, and add chopped onion, green pepper and garlic. Saute until tender, and drain oil. Add diced tomatoes and green chilies, tomato sauce, water and fish, and bring to a boil. Lower heat and simmer 45 minutes. Add remaining ingredients, and continue cooking over low heat for 15 minutes. Serve hot over cooked rice.
