  1. 4 beef cube steaks

  2. 1 cup chunky salsa

  3. 1 cup shredded Pepper Jack cheese

  4. 1 avocado, peeled and sliced

  1. Arrange steaks in an 8" square microwave safe dish. Cover loosely with waxed paper and cook on HIGH for 6-8 minutes, turning beef over and rearranging after 3 minutes, until almost done. Drain. Top each steak with salsa. Cover loosely with waxed paper and cook on HIGH for 2-3 minutes or until salsa is hot. Sprinkle each with cheese and cover. Let stand 2 minutes until cheese is melted. Top with avocado slices and serve.
