  1. 1 Beer - (12 oz)

  2. Puree from 6 cloves Caramelized Garlic - (see recipe)

  3. 2 tablespoons 30ml Balsamic vinegar

  4. 2 tablespoons 30ml Olive oil

  5. 1 teaspoon 5ml Dry mustard

  6. 1 teaspoon 5ml Worcestershire sauce

  7. 1/2 teaspoon 2 1/2ml Tabasco sauce

  8. 2 lbs 908g / 32oz Sirloin steak

  9. Freshly-ground black pepper - to taste

  10. 4 tablespoons 60ml Butter

  1. In a shallow bowl combine the beer, garlic, vinegar, olive oil, mustard, Worcestershire sauce, and Tabasco and mix well. Add the steak, sprinkle liberally with black pepper, and marinate 24 hours in the refrigerator, turning occasionally.

  2. Preheat the grill to a high heat.

  3. Remove meat from marinade and place on hot grill for 3 to 4 minutes on each side. Move to medium heat or to cooler edge of the grill and cook until done.

  4. Place the remaining marinade in a small cast iron sauce pot on your side burner and boil 2 minutes, Stir in the butter and heat until the butter melts.

  5. Slice the steak, arrange on a platter, and pour the marinade sauce over the meat.
