  1. 6 sun-dried tomato halves (not oil-packed)

  2. 1/4 cup boiling water

  3. 5 ounces lite silken tofu

  4. 2 teaspoons prepared plain horseradish

  5. 1 tablespoon catsup

  6. 1 teaspoon minced shallot or onion sauce

  7. 1/2 teaspoon Worcestershire sauce Salt and pepper to taste

  1. Instructions 1. In a small bowl, cover sun-dried tomatoes with boiling water and let sit until tomatoes have softened, 15-20 minutes. Remove tomatoes and chop coarsely; reserve soaking liquid.

  2. In a blender, combine tomatoes with remaining ingredients. Blend until smooth, stopping to scrape down sides two or three times. Add soaking liquid, as needed, to achieve desired consistency.
