  1. 1 medium sized cabbage, coarsely chopped

  2. 5 tablespoons butter

  3. 3 cloves garlic, chopped

  4. 1/4 cup all-purpose flour

  5. 1 1/3 cups milk

  6. 2 teaspoons spicy mustard or Dijon

  7. 8 ounces white Cheddar cheese, shredded

  8. 8 ounces sharp Cheddar cheese, shredded

  9. Salt and pepper to taste

  10. Toppings:

  11. 1 tablespoon parsley for garnish

  12. 2 tablespoons grated Parmesan cheese, optional

  13. 1 cup soft bread crumbs

  14. 1 1/2 tablespoons butter, melted

  15. Preheat oven at 350F.

  16. 3 tablespoons of butter. Saute the garic for 2-3 minutes or until light brown. Add the the cabbage and stir-fry for 5-8 minutes or until it is soft. Drain the excess water and set aside.

  17. In a small bowl, combine themilk, flour and mustard. Mix well until there are no more lumps. Fold in the white and sharp cheddar cheese. Pour it into the cabbage. Mix well and let it simmer for 8-10 minutes or until thick.

  18. 20-25 minutes or until it is golden brown. Let it stand for 5 minutes.

  19. Garnish with chopped parsley and serve warm.
