  1. 1 cup cooked -- (or canned) beets, -- diced

  2. 1/2 teaspoon salt

  3. 1/4 teaspoon pepper

  4. 1 tablespoon lemon juice

  5. 1 teaspoon prepared mustard

  6. 4 tablespoons sour cream
