  1. 3 cups cooked rice

  2. 1 1/2 cups slivered cooked pork*

  3. 1/4 pound fresh snow peas, trimmed and julienned

  4. 1 medium cucumber, peeled, seeded, and julienned

  5. 1 medium red bell pepper, julienned

  6. 1/2 cup sliced green onions

  7. 2 tablespoons sesame seeds, toasted

  8. 1/4 cup chicken broth

  9. 3 tablespoons rice or white wine vinegar

  10. 3 tablespoons soy sauce

  11. 1 tablespoon peanut oil

  12. 1 teaspoon sesame oil

  13. Combine rice, pork, snow peas, cucumber, bell pepper, onions, and sesame seeds in large bowl. Combine broth, vinegar, soy sauce, and oils in small jar with lid and shake well. Pour over rice mixture and toss lightly. Serve at once or slightly chilled.

  14. 1 1/2 cups slivered cooked chicken for pork if desired. Serves
